Did you know that hens have an incredible ability to regulate the calcium in their bodies? This means they can lay strong-shelled eggs consistently, even if their diet is low in calcium for short periods. However, to keep them healthy and ensure they lay the best quality eggs, always provide a calcium-rich diet, such as crushed oyster shells or special feed. This little adaptation is one of the reasons chickens are such prolific egg layers!

Eggs—those wholesome little orbs that pack in so much of nature’s nutrition. Growing up, I constantly heard from nutrition experts that we “shouldn’t eat more than two eggs a day…because of the cholesterol.” Yet how many of you who eat or lay eggs, er... I mean those who have chickens, eat more than two a day?

I met a guy at the Greeley farmer’s market who eats 4 eggs per day. Several parents say their kids eat 4-6 eggs per day! Of course, when I asked, they told me they were athletes. But I wonder, how many eggs do you eat on average?

Fast forward to today, and we see that those who adopted the “low-fat” diet are plagued by cardiovascular diseases, cancer, and synthetic foods that are proving to be equally unhealthy.

That’s good news for those of us who enjoy eggs. When you eat eggs, you choose something inherently better, something nature has designed to nourish us completely. Imagine the satisfaction of knowing each egg you consume is a step toward better health, a more natural diet, and a sustainable lifestyle.
